Ingredients

1 lbs (750 gr) fresh apricots
2 cups granulated sugar
1 cup walnuts (in large chunks)
1 tablespoon lemon juice
½ cup water
5½ oz (150 gr) clotted cream
1 teaspoon cinnamon
3-4 fresh mint leaves

Preparation

APRICOT DESSERT

1 Lay the apricots in a pan and cover with sugar. Sprinkle with cinnamon.
Rest the apricots overnight.
2 The next day, add the water and lemon juice, cook until apricots soften.
Gently cut the side and remove the seeds, then place the apricots onto a
serving plate.
3 Stuff the apricots with clotted cream and walnuts.
4 Continue cooking the apricot syrup until it thickens.
Pour the syrup over the apricots.
5 Top with mint leaves and serve.
