Ingredients

SERVES 6
3 medium zucchini
1 egg
4 tablespoons corn flour
1¾ oz (50 gr) (2 slices)
feta cheese
3-4 fresh scallions
¼ bunch fresh parsley
¼ bunch fresh dill
1 teaspoon baking powder
1 teaspoon salt
3 tablespoons olive oil
1 tablespoon sunflower oil

Preparation

(ZUCCHINI PATTIES WITH DELICIOUS HERBS)

1 Peel and grate the zucchini, remove their juice by squeezing
   with your hands. Place in a deep dish.
2 Add the minced scallion, parsley, dill, mint, corn flour and egg,
   stir well.
3 Add the salt, mashed feta cheese, olive oil, baking powder and
   salt. Stir to form the zucchini mix.
4 Take one tablespoon of the zucchini mix and roll into a ball,then slightly pat.
5 Cook the zucchini patties in a nonstick pan with one tablespoon sunflower oil.
6 Serve hot with garlic yogurt and green salad
