Salads

Ingredients

SERVES 6
1 head of lettuce
2 tablespoons walnuts (coarsely
chopped)
2 tablespoons pine nuts
1 tablespoon unsalted pumpkin
seeds
1 tablespoon unsalted
sunflower seeds
1 tablespoon raisins
1 tablespoon sun dried
tomatoes
1¾ oz (50 gr) parmesan cheese
5-6 seedless black olives, pitted
2 oz (60 gr) rice noodles
1 lemon (juiced)
¼ bunch fresh mint
¼ bunch soya sprouts
1 tablespoon soy sauce
1 teaspoon honey mustard
½ teaspoon salt
3 tablespoons olive oil


Preparation

ORIENTAL SALAD

1 Chop the lettuce into big chunks and place on a serving plate.
2 Add the pumpkin seeds, walnuts, sunflower seeds, raisins, pine nuts,
parmesan cheese and sprouts.
3 Slice the olives and add.
4 Mince the mint and add.
5 Boil the rice noodles, strain and stir in one teaspoon olive oil. Add the rice
noodles to the oriental salad mix.
6 Prepare the salad dressing by mixing together the mustard, soy sauce,
remaining olive oil and lemon juice.
7 Pour the salad dressing on the salad. Top with shaved parmesan cheese
and serve.
